Dinner with SacFarm2Fork & Visit Sacramento

and the Grange Restaurant at The Citizen Hotel

I was invited to shoot photos as part of a #sacfarm2fork dinner for @sacfarm2fork recently while some of Sacramento’s finest sat down in the Presidential Suite at @TheCitizenHotel.

On The Table

  • Charcuterie platter: Marin Brie, Cabot cheddar, mezzo secco, Humboldt Fog, Red Hawk, and Point Reyes blue cheeses
  • Passmore trout rillettes with roe, dill popovers, and crisp capers
  • Chilled English pea soup with lemon crème fraîche, olive oil, and radish blossoms
  • Watanabe summer squash salad with pickled walnuts, arugula, feta cheese, and avocado mousse
  • Salmon crudo with pickled ramp salsa verde, fava beans, shaved golden beets, and chive emulsion
  • Alaskan halibut with favas, ramps, Alba mushrooms, fingerling potatoes, and sauce
  • Americaine Snake River Wagyu flank steak with confit potatoes, asparagus, radish, and broken olive salsa verde
  • Yuzu fritter with black sesame coulis, ginger foam, and cremeux
  • Strawberry Shortcake with Watsonville Chamomile strawberry, lemon pound cake, strawberry black pepper, and mascarpone cream
